Healthy & Delicious Alternative to Stuffing - Wild Rice with Radicchio & Dried Cherries
This is one of my favorite recipies. It is so different, but everyone loves it. I've made it for Christmas dinner the last few years, but I think it would be an awesome replacement for stuffing for Thanksgiving as well. The only change I've made is using a mix of brown rice and wild rice, instead of just wild rice. Delicious either way. I originally found the recipe in Prevention magazine. When I found it again online, the source had a name, which I included at the bottom. Give it a try.
Wild Rice with Radicchio and Dried Cherries
1/2 cup dry red wine
1 head radicchio (12 ounces), cored and finely chopped
3 green onions, chopped, with some green tops
2 cups cooked wild rice
3/4 cup chopped parsley
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1/4 cup walnut or olive oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons slivered almonds, lightly toasted (optional)
Parmesan cheese (optional)
In small bowl, cover cherries or cranberries with wine and let soak for about 2 hours or overnight. Drain, discarding wine or reserving for another use.
In large bowl, toss radicchio, onions, rice, and parsley.
In small bowl, whisk together vinegar, mustard, oil, salt, and black pepper.
Pour over the radicchio mixture and toss gently. Serve at room temperature, sprinkled with the almonds. Add shavings of Parmesan, if using.
Makes 10 servings. Approximate nutritional values per serving: 147 calories (43 percent calories from fat), 3 g protein, 17 g carbohydrate, 5 g sugar, 3 g fiber, 7 g total fat, 1 g saturated fat, 2 g monounsaturated fat, 152 mg sodium.
