Whole Wheat Chocolate Chip Cookies
These cookies are made with whole wheat flour - but no one will ever know - they are delicious - I promise! The whole wheat adds a bit of fiber and nutrition to the cookie, but remember, it is still a cookie. Enjoy one as a delicious dessert. If you have trouble controlling yourself around cookies - like I sometimes do - then I recommend freezing at least half the batch after they've cooled. Then when you want a cookie, you have to sit it out and wait for it to defrost. Also, if you have a tendency toward blood sugar issues, try making these with Agave nectar - it is a natural sweetner that's absorbed slowly into the bloodstream.
Preheat oven to 375. Line cookie sheets with parchment paper.
Beat the following ingredients together:
1/2 cup brown sugar
3/4 cup raw sugar or granulated sugar
1/2 cup / 1 stick butter
1/4 cup olive oil
1 teaspoon vanilla
1 egg
Add in:
2 cups whole wheat flour
1/2 teaspoon sea salt
Stir until combined. Then add in:
1 package (12 ounces) semisweet or dark chocolate chips
Drop by rounded teaspoonfuls onto lined cookie sheets. Bake for 8 to 10 minutes or until golden around the edges. Cool for 5 minutes on cookie sheet, then move cookies to cool on a wire rack. Enjoy!
