Homemade Healthy Granola Bars - Allergy Free

This recipe is free of dairy, tree nuts, peanuts and eggs. The amounts I used are approximate and feel free to use substitutions. If you read my recipes, you know most of them come from me experimenting!

1 cup of rolled oats, toasted in 350 oven on cookie sheet for 15 minutes

1 bag of Enjoy Life Mountain Mambo Granola (a mix of dried apples, raisins, sunflower kernels, pumpkin seeds)

3/4 cup unsweetened coconut (Let's Do Organic brand is what I use), toasted in oven at 350 for 10 minutes.

1 bag Gerbs lightly salted pumpkin seeds

1/2 cup wheat germ

1/4 cup ground flaxseed

2 Tblsp sesame seeds

1/3 cup dates

1/2 cup pitted dried plums

1/3 cup Sunbutter (use peanut butter if you're not allergic)

1/2 cup honey or agave nectar (use agave if you're watching your blood sugar)

2 Tblsp water

2 Tblsp sunflower oil (or canola oil)

 

Mix first 7 ingredients in a bowl, oats through sesame seeds.

In a food processor, combine dates, dried plums, sunbutter, honey, water, and sunflower oil.

Mix the dry with the wet and press into a 9 x 13 pan coated with cooking spray. Press down firmly, with wet hands, so your hands don't stick to the mixture.

Place in refrigerator for about 30 minutes. Remove, cut around edges, use a spatula to remove from pan, and cut into squares or rectangles. Eat as a healthy power snack or even a breakfast bar! I store them in the refrigerator.
